Add a smokey flavor to your toast! This recipe uses our TrueFire Gourmet® Cedar Planks to give you a great tasty option to just plain bread. Cook it alongside your favorite dish for an excellent meal.
8 slices Italian or sourdough bread cut to 1/2 inch thick
2 tablespoons extra virgin olive oil
2 cloves garlic, pressed
1 pound (about 3 medium) ripe tomatoes chopped into small cubes
1/3 cup chopped oil packed sun dried tomatoes
1 tablespoon balsamic vinegar
2 tablespoons chopped fresh basil
1 clove garlic, pressed
Kosher salt and freshly ground pepper, to taste
Extra virgin olive oil
Prep plank according to guidelines and heat grill to medium high.
For toast, mix olive oil with fresh garlic and a dash of salt and pepper. Brush bread slices on both sides with olive oil mixture and place on hot plank. Grill until lightly golden brown, turning once for a total of 5 to 7 minutes. Remove from grill.
For topping, mix all topping ingredients together.Spoon topping onto toasted bread and return slices to grilling plank. Close lid and grill for another two to three minutes, or until hot and crisp.
