TrueFire Gourmet® Cedar Planks make great seafood. These plump and juicy shrimp are great as an appetizer or as a main course.
5 cloves minced garlic
1 bunch scallions, chopped
1 bunch cilantro, chopped
4-8 jalapenos, chopped (remove seeds for a milder version)
2-2 1/2 pounds jumbo shrimp or prawns
1/2 cup lime juice
8 teaspoons olive or vegetable oil, or butter
1 teaspoon salt
Combine all ingredients (except shrimp) and mix well.
Add shrimp and to mixture and let marinate for 20-30 minutes.
Place shrimp on plank and sprinkle some extra marinade on top.
Grill on medium heat for about 8 minutes or until shrimp are no longer translucent inside.
Serve with toothpicks for a great appetizer or with a side dish of your choice for a great main course.
